TRADITIONAL ELABORATION
Grapes are selected and harvested manually, then selected again prior to destemming. Once destemmed, they undergo a third rigorous selection process as individual grapes.
Natural yeasts kick-start a spontaneous alcoholic fermentation in open 500-liter French oak barrels.
Malolactic fermentation is carried out in specially selected 225-liter French oak barrels. We then let nature take its course in the most respectful way possible.
TASTING
Intense cherry red color. High intensity. Ripe candied fruits dominate (raspberry, blackberries and cassis), some roasted aromas with hints of spices (cinnamon and incense). The potency of the Tempranillo combines with the minerality of the earth (ink, slate). Perfect balance with exceptionally fine tannins and freshness that extends the enjoyment.
