The Tempranillo grapes used in this wine come from La Horra and from vines average age 40 years. Soils are clay, loam and sandy at 800-840 meters of altitude. After being hand-harvested and undergoing cluster selection in the vineyards, the grapes are destemmed and go through gravity-controlled tanks, with five to six days of cold-skin maceration prior to fermentation. An additional two months of maturation follow, with malolactic fermentation taking place. The wine is aged for twelve months in two-plus year-old barrels (50-percent American and 50-percent French oak). It is then aged an additional one year in bottle before leaving the cellar.
The 2015 harvest was characterized by a very low yield production. The climatology conditions were good along the cycle, very healthy vintage and especially dry along September. The early harvesting September 21st –October3rd gave to the wines powerful fruit aromas, balance tannins, intense colour and adequate acidity for aging into barrels.
The 2015 vintage was qualified as EXCELLENT.
This wine is ideally served at the temperature of 16 ºC (61 ºF) to accompany pork and beef dishes stews, as well as hard cheese.
